Chateaubriand and Pepper Sauce (For Two)
Fine dining at home. A luxurious meal for two.
Leave your Chateaubriand out at room temperature for around 20 minutes prior to cooking.
Season well with freshly ground salt and black pepper.
Preheat your oven to 220°c. Now turn on the stovetop and get your frying pan or griddle nice and hot. Add a splash of olive oil.
Once the oil begins to smoke slightly, add your Chateaubriand and sear all sides until you achieve a nice, brown crust. If the pan doesn't sizzle, it's not hot enough!
Place on a baking tray and pop in the oven -
Rare: | 6-8 minutes |
Medium-rare: | 10-12 minutes |
Medium: | 14-16 minutes |
Well done: | 18-20 minutes |
Remove from the oven and allow to rest for around 8-10 minutes prior to serving.
Heat your Peppersauce in a mmicrowave dish or on the stovetop in a small saucepan.
Slice your Chateaubriand, pour over your Peppersauce and serve.
